Possibly the one thing I love more than bread products is the spreads and shmears that accompany them. I love experimenting with flavored butters, cream cheeses, and dips that double as wrap or sammy spreads.
Enter: Tomato Butter. I worried that it might taste like tomato sauce on bread, but it’s the perfect balance of tangy, savory tomato and sweet, creamy butter.
It’s ready in about five minutes and can be used for bread, bagels, or wherever else you might spread butter. May I suggest having it slathered on a thick piece of toast with a fried egg (my breakfast this morning) — life changing! Or alongside my Fire Roasted Corn Chowder for a delicious summer-inspired pair.

Prep time: 5 minutes (includes cooling time)
Cook time: 15 seconds
Total time: ~5 minutes
Ingredients:
1/2 stick of butter
1 tbsp tomato paste
Directions:
In a small microwave-safe dish, melt butter in microwave for 15 seconds or until softened but not completely liquified.
Mix in tomato paste until evenly distributed.
If mixture is completely liquid, place in fridge for 5 minutes to firm slightly. Serve while soft.
Note: Because tomatoes are high in water content — even in a concentrated paste — the spread will separate slightly when stored. It can be quite chunky after removing it from fridge storage. I recommend serving it softened so it spreads easily and is a little more appealing to the eye.
