Peachy BBQ Chicken Salad

For me, the ideal summer 30 minute meal has fresh greens, seasonal produce, and a grilled protein. This salad checks all those boxes: Delicious sweet and tangy barbecue chicken breast paired with sweet, juicy peaches, creamy burrata cheese, crunchy greens, and drizzled with a light oil and vinegar dressing. It perfectly combines my need for a light yet nutrient dense dinner when it’s too hot to spend more than a half hour in the kitchen.

Meal prep tip: Double the chicken and BBQ sauce portion of this recipe so you’ll have extra chicken for salads and wraps for the week’s lunches.

Ingredients

2 slightly underripe peaches

2 thin cut chicken breasts (If you can’t find thin cut, I’d recommend pounding them to about 3/4 inch-thick with a meat tenderizer to make them cook faster and more evenly)

1 ball of burrata ( a softer style of mozzarella, regular mozzarella or dairy free mozzarella works here, too!)

1/4 cup BBQ sauce (I prefer a vinegar based BBQ sauce and that’s what I used here)

1 tbsp honey

2 tbsp balsamic vinegar

1/4 cup olive oil

Mixed greens

Directions

  1. Preheat a grill pan, cast iron or regular skillet with 1 tsp of oil.

  2. Halve each peach and remove the pit. Brush peach halves with oil, place inside-down on the edge of the pan (leave room for chicken in middle). Remove from grill when fruit softens and grill marks appear, usually after 4-5 minutes (They burn quick, so pay attention!). Allow to cool.

  3. Add chicken to middle of grill pan. Grill on each side for 5-6 minutes, allowing chicken to reach internal temperature of 165F.

  4. While peaches and chicken are grilling, combine BBQ sauce with honey and baste onto chicken using a kitchen brush or spoon.

  5. Slice peaches and chicken.

  6. To serve top mixed greens with burrata, peaches, and chicken. Drizzle with remaining olive oil and balsamic vinegar. Optional: Garnish with micro greens or any fresh herbs you have on hand.
